New Year’s Veggie Salad

Happy New Year!

Serve this tasty immune-boosting salad to your horse and give him a great nutritional start to the new year. ~ Dr. Cassie

Use organic ingredients as much as possible:

1 handful of Romaine lettuce, torn into bite size pieces

1 handful of parsley, chopped

2 Kale leaves, chopped

1/2 of a medium sweet potato, baked, cooled, sliced

1/2 medium carrot, sliced

2 tablespoons chia seeds

2 tablespoons hemp seeds

1/4 cup pumpkin seeds

Toss all ingredients together and serve immediately. Makes one generous serving. Can be served alone or along with your favorite mash.

For horses who are Insulin Resistant: swap out the carrot and sweet potato for turnip to reduce sugar content but retain fiber and vitamin/minerals.

Ingredients We Want to Understand:

Romaine Lettuce – contains many of the B vitamins. B vitamins help to combat stress that cold weather may create.

Parsley – rich in vitamins A and C, both of which are needed for a strong immune response.

Kale – a magnesium-rich, dark leafy green that works with other minerals in the body’s immune response.

Sweet Potato – high fiber, vitamin C-rich food.

Carrot – contain anti-oxidants that can protect cells.

Chia – an easily digested source of protein that also has a high zinc content. Zinc is a primary mineral needed by the immune system.

Hemp Seeds – rich in essential fatty acids (Omega-3, Omega-6, Omega-9). EFA’s are known to regulate the immune response.

Pumpkin Seeds – contain compounds called phytosterols that boost immune function.
