By giving your horse the rinds instead of the fruit itself, you are reducing sugar while still providing fiber, antioxidants from the peels, moisture, texture and taste. Don’t throw away the watermelon seeds – give them to your horse as they have nutrition in them useful to urinary and kidney function.
- 1 organic orange
- 2 one-inch slices watermelon
- 1/4 cup plus 10 raw almonds
- fresh peppermint leaves
- salt if desired
Peel the organic orange and set the peel aside. In a bowl for YOU, place the orange segments. Chop up the organic orange peels and put in a feed pan for YOUR HORSE.
Trim the red meat from the watermelon. Cube the melon and add to the orange segments in the bowl for YOU. Chop the rind into 1″ – 2″ cubes and add to the feed pan with the chopped up orange peels for YOUR HORSE. Sprinkle 1/4 cup of raw almonds in the pan for YOUR HORSE. Sprinkle the 10 raw almonds over the orange and melon for YOU.
Add fresh peppermint leaves to both bowls. Add salt if desired.

I split this recipe between our two horses Docko and Windstar. They would have preferred to have had their own full servings as they quickly devoured every bit of the salad. I added salt to their salad as well. I can see adding freshly ground flax seeds to this recipe also.
